Ive had the 5.5″ Santoku in my kitchen for about six months. I didnt baby itno rushing to washbecause I wanted to see how the edge would patina. With lazy care, it darkened pretty fast and has mostly settled. I know some folks love that old-world high-carbon look;
Im not a huge fan because it can get blotchy. What surprised me is how great the Damascus looks next to that gray edgeit really shows where the Damascus ends, and the Aogami steel cutting edge starts making the Damascus really stand out
